Easy Tomato Beef Zucchini Soup

I love easy recipes, and one of my favorites is a one pot soup. This one is easy, quick to throw together, and most of all delicious. Because you start with a delicious sauce with the perfect seasoning and a rich depth of flavor, this soup does not require all day cooking to develop the flavor. All you need is a few simple ingredients and you have a delicious gluten-free meal in under 30 minutes.

1 pound ground beef

1 onion diced

2 zucchini

1 can White Beans (drained & rinsed)

1 TBSP Garlic-infused olive oil (can use regular olive oil)

Salt & Pepper

Parmesan cheese (optional)



Dice the onion, place your soup pan on a medium high heat

Add olive oil to the hot pan, then add the onions, cook until translucent and remove from pan.

Add ground beef to the pan, break into small pieces, season with salt and pepper and cook until browned.

Add the onions to the ground beef, then add bone broth, Harry’s Famous Rosemary Red Sauce (full jar for rich tomato flavor, 1/2 a jar for a light flavor), and drained & rinsed white beans. 

Simmer for 10 minutes.


While the soup is simmering, spiralize the zucchini into noodles, and add to the soup after it has simmered for 10 minutes. Cook until noodles are tender.


Serve in bowls, and top with parmesan cheese (optional)


I served the soup with Katz Texas Toast and it was the perfect addition.  You will want it to soak up the last bit of the soup.
