My favorite Thanksgiving dish, Sweet Potato Casserole. Don't worry, no marshmellows are included. This is my take on a family favorite but without the gluten, dairy and sugar I can no longer eat. It is still sweet and delicious. It is the hit of every party I bring it to.
I will make this dish the day before and just heat it before we eat.
5 or 6 sweet potatoes cooked and peeled
Mash the sweet potatoes with 1 stick of butter (I used dairy free Earth Balance)
1 tsp Cinnamon
1/4 to 1/2 c maple syrup
1 tsp vanilla
1/2 tsp salt
Cook and peel the sweet potatoes (check out my YouTube Short video for a cooking hack on how to easily peel potatoes). Add to large mixing bowl. Mash or blend the sweet potatoes with the butter, cinnamon, maple syrup, vanilla, and salt. I like to use an immersion blender or a mixer to make sure it is super creamy. Once mixed and smooth, spread smoothly in a 9x13 baking dish.
Crunchy Topping:
Originally this topping was made from cereal, butter and sugar, but it definitely was not gluten-free. Instead, I make a topping that is crunchy and the perfect mix of salty and sweet.
1/2 stick of butter or dairy-free butter
8-12oz if sliced almonds or your choice of nut (optional)
1 bag sweet potato chips, crushed in small pieces
1/4 of coconut sugar or maple sugar (if you aren’t sugar sensitive, you can use brown sugar)
Crush the sweet potato chips in the bag (a good way to take out the holiday stress). Then brown the butter in a large skillet on medium heat, and add sugar, chips, and nuts to the butter. Stir regularly and cook until lightly toasted. Watch carefully because it can burn quickly.
Top the sweet potatoes with the topping (you will want lots of topping). At this point you can cover and store in the refrigerator overnight or put it in the oven to bake at 350 for 30 minutes until hot.
Quick Tip:
Since oven space is often at a premium for Thanksgiving and Christmas, I pull out my large Hotlogic Oven Max . It is an insulated carrier that will cook your food. I have a small one that I take for travel, but this large one is so good if you attend potlucks often or travel with a family. You can cook the casserole in this and it will keep it warm before serving or during transport.
